Start to mix 7-8 mins with low speed, then change to high speed mixing another 7-8 mins.

Until the dough looks smooth.

Step 2, Let the dough rise.————-Using proofer.

Put the dough into a proofer, set the temperature to 30 degrees, for 40-60 mins.

Step 3, divide the dough.————–Using hydraulic dough divider.

It can divide the dough into 20 pcs per time, each dough weight range from 100g to 800g.

You put a 70000g into the hydraulic dough divider to divide the dough into 450g per piece for toast.

(The standard bread is 450, 750g, 900g, 1200g based on your needs)

Step 4, shape the dough.———–Using baguette moulder.

Step 5, let the dough rise a second time.——–Using proofer again.

Set the temperature to be 30 degrees, humidity to be 75% , put the dough into the proofer for 60 mins.

Step 6, baking the bread.——-Using rotary oven.

Set the temperature to be 220 degrees, baking for 30 mins.
